With the change in the weather, all I can think about is comfort food!
Mac and cheese, and pot pies and broccoli-cheddar soup and some Indian style spicy chicken curry and rice! 😊 Additionally, some hot dark chocolate and the ultimate fall favorite, pumpkin spice latte sounds great!
But on a serious note, when you get home exhausted from work, the last thing you want to do is cook or clean. Or is it just me? I find that I have a hard time coming up with creative dinner ideas and I am Indian! Ha! I have been told that there are so many varieties of Indian dishes that I should never have a problem picking a perfect recipe each day!
My husband and I love all kinds of dishes. Skipping meat on some days and with the exception of all red meat, we love to try different methods of cooking. He is the cook for non-vegeratian dishes and often times, after I ask him how he made something (because it was so delicious!!), he would shrug and say, “I don’t know. I just mixed and added ingredients and this happened”.
Trust me, he is not lying! He is humble and never pays attention to quantities.
I love working from a recipe or even writing one down as I prepare. That way, I can replicate the dish later. He wings it and everything turns out great 🙂

This is one of those meals that you can make and freeze for later. It is packed with delicious ingredients like artichokes, basil, cherry tomatoes and olives. Yummy! Filling and does not take too long to make!

Another easy and a comfort dish! You just throw the ingredients together and set it to bake. Since we do not eat bacon, I skipped it in our dish but it was still delicious.
